Description
Java Pepper (Piper cubeba) is native to the Indochinese region, where it is used as a spice and medicinal plant. The warm, slightly bitter flavor of the dried berries (“cubebs”) pairs particularly well with dark sauces, game, sausage, and other hearty dishes.
The plant itself grows as a shrub or climber, with fairly small, pointed leaves on long branches. It branches profusely but grows quite slowly. The inflorescences appear at the tips of the shoots and bear several dozen berries. The fruits are harvested while still green (unripe!) and dried in the sun to produce the spice.
